No baking is required—just 45 minutes and you're done. Whether you opt for a thin layer of white chocolate or keep them simple, they’re a fantastic light snack that's both tasty and satisfying. Ideal as a light and satisfying snack any time of day!
Ingredients
• ½ cup Great Lakes Wellness – Collagen Peptides powder
• ½ cup coconut flour
• 3 tbsp lemon curd
• 3 tbsp monk fruit sweetener (or any sweetener)
• ⅓ cup melted white chocolate (optional for coating)
Method
• Mix Dry Ingredients: In a bowl, combine the Great Lakes Wellness – Collagen Peptides powder, coconut flour, and monk fruit sweetener.
• Add Lemon Curd: Slowly mix in the lemon curd. Use your hands to knead the dough for about 1 minute until it comes together. If the dough is too soft, add more coconut flour; if too thick, add a small amount of water or almond milk.
• Shape & Chill: Shape the dough into a rectangular block, wrap it in plastic, and place it in the freezer for 30 minutes.
• Optional Chocolate Coating: Melt white chocolate in the microwave in 20-second bursts. Dip each bar in the chocolate and set on parchment paper to cool.
• Serve: Enjoy immediately or store in the fridge for a chewy texture.
